Cabbage Soup

This soup may be stored in the refrigerator for several days. It is also good to freeze half and save half for another day. This is good for vegetarians - just leave off the ground turkey and beef broth. My husband and I really like this soup. Healthy and good, especially on cold days. - ​Kathy Kurazawa

Prep Time: 20 Minutes
Cook Time:  5 Hours in Crockpot or 25 Minutes on Stovetop
Servings:  12

Ingredients:

1 head cabbage, shredded
1 cup carrots, shredded or chopped
2 (8 oz cans) Rotel tomatoes
1 small bag frozen green beans (or 2 small cans)
1 green bell pepper, diced
5 stalks celery, chopped
1 package Lipton Onion Soup Mix
2 (8 oz cans) beef broth (or plain water for vegetarian version)
1 pound ground turkey (leave this out for vegetarian version)
Black and red pepper
Water

Directions:

Brown ground turkey in skillet.
Place cabbage, Rotel tomatoes, bell pepper, green beans, celery, ground turkey in Crock Pot (or large pot on stove). Add onion soup mix and beef broth.

Add touch of black and red pepper. Stir. Add enough water to cover vegetables.
Turn Crock Pot on Low and cook 5 hours (for me it is usually about 8 hours)
If using pot on stove simmer until vegetables are tender - about 25 minutes.
