Chicken Salad Craisin

Ingredients:36 oz Canned Chicken
1 1/2 Gala Apples (or apple of your choice) 4 Boiled Eggs 4 Celery Stalks 1 5oz Bag Craisins 1/2 Cup Pecans 16 oz Mayo (or you can substitute the mayo for plain Greek Yogurt for a more healthy choice) 1/3 Packet Ranch Powder 1/2 tbsp Oregano 1/2 tbsp Basil 1/2 tbsp Paprika 1/2 tbsp Garlic 1/2 tbsp Celery Seed |
Directions:Open can(s) of chicken and drain juice. If you want to make sure all the juice is off you can rinse the chicken with water. Empty can of chicken into medium or large bowl (this can get messy if the bowl is too small)! Normally, if you buy a large can of chicken the chunks are rather large. I like to take my hands and shred the chicken or take a spoon and mash the chunks down into smaller pieces (up to you)!
Chop apples, eggs and celery into bite size pieces. I prefer to have little chunks of these ingredients in my chicken salad because I like the texture and crunch it gives. If you are more minimal on the crunch-o-meter I would recommend finely chopping these ingredients. Take craisins and soak in warm water (2-4 min), then drain. I like to do this because it tends to bring out the flavor of the cranberry and makes it a little softer and less chewy. Time to add and mix! Add apples, eggs, celery, pecans and craisins to chicken (I prefer chopped pecans but if you like them please feel free to add more or go with a larger size). Then add in your spices (ranch powder, oregano, basil, paprika, garlic, celery seed). Next add half a jar of mayo (or yogurt) to the chicken. Mix together with a large spoon (hands work best) and taste test. I don’t like my chicken salad to be dry so I tend to add lots of mayo (more than one should probably consume)! Based on the taste test feel free to use the rest of the mayo (or yogurt) until you are content. You can always do half mayo, half yogurt if you are feeling guilty about the mayo. I usually refrigerate my chicken salad for 8-12 hours so the chicken can absorb all the flavors. It is ready to be consumed when you are ready to eat. |
