Ingredients:1 medium head garlic or 6-8 cloves (do not use elephant garlic because it is not garlic)
30 fresh leaves of basil 2 Tbsp. olive oil ½ tsp. crushed red pepper 1-28 oz. can crushed tomatoes |
Directions:Sliced, crush or chop garlic (according to personal preference). Sauté garlic in olive oil over medium-low-to-medium heat until fragrant (about 5 minutes). Stir in crushed tomatoes and crushed red pepper. Be certain to use a quality brand of tomatoes—it does make a difference in the overall taste. Stirring frequently, heat sauce until it begins to simmer. Turn heat to low. Cut basil into strips. It’s easiest if you roll several basil leaves together before you cut. Add basil to sauce and cook on low for 30-45 minutes. Serve with pasta, use on a pizza, as a dip or serve over a salad with a hearty lettuce such as romaine. Top with freshly grated Parmesan cheese. Serves 6-8.
