Easy Sweet Potato and Squash Soup
Fall into healthy comfort food, with my 'Easy Sweet Potato and Squash Soup.
I honestly got the craving for sweet potato pie one day, but I wanted something mild to balance the flavor, so I made this recipe "on-the-fly."
It was easy. It was tasty. And it didn't take up my day. Even when you're at your worst in the kitchen, you can't go wrong with this recipe.
The sweet flavor from the potatoes and the mild, savory flavor from the garlic and squash are great.
I hope you all enjoy a taste of fall. What's great about this soup is you can really play with your sides. I'd do a whole wheat grilled spinach, sun-dried tomato and cheese sandwich, or a simple Greek salad.

Ingredients:2 small sweet potatoes (cubed)
1 small butternut squash (cubed) 3 c. low sodium chicken broth 3 cloves of garlic 1/4 teaspoon onion salt 1/8 teaspoon cracked black pepper 3 tablespoons heavy whipping cream 1- 1/2 tablespoon Spanish olive oil (optional) |
Directions:Boil sweet potatoes and squash for 20 minutes or until tender.
Blend potatoes and squash with chicken broth, garlic and Spanish olive oil. Place soup in a pot, and turn heat on medium-high. Add onion salt, black pepper, whipping cream. Simmer for 5-10 minutes. Enjoy |
