Italian Chicken with Stewed Tomatoes and Sweet Onions

Ingredients:Olive oil
1 1/2 Vidalia onions (sliced) 3 cloves of garlic salt and pepper 3 chicken breast (cubed) 1/ 4 tsp. granulated garlic 1/8 tsp. seasoned salt 1/4 tsp. Ms. Dash (garlic and herb) 1 tsp. Italian seasoning 1 cup low sodium chicken broth 2 bay leaves 1 tsp. sage 1/8 tsp. crushed red pepper Can of Hunt's diced basil, garlic and oregano tomatoes |
Directions:Heat olive oil in a dutch oven or a non-stick pot on high heat
Add onions, garlic, a pinch of salt and a pinch of pepper Sautée on high heat, then turn to med-high. Cook for 7 minutes or until golden brown and transparent. Take onions out of the pan and set aside (you will add them back to the pot later). Season chicken with a pinch of salt, pepper, granulated garlic, seasoned salt, Ms. Dash, Italian seasonings Add chicken to pan and brown Take chicken out and set to the side in a bowl Deglaze pot with chicken broth Bring liquid to a boil Add onions back to the pan. Then add bay leaves, sage, crush red pepper, and can of diced tomatoes Stir, cover and cook for 5 minutes Uncover, add chicken, stir, turn heat to medium-low, cover, then simmer for 10 minutes. Check to make sure chicken is tender. You can pair the chicken with whatever you'd like: black beans, brown rice, vegetable medley...the list goes on. Simply, it goes well with anything in the pantry or fridge. |
