Peppery Cream Cheese Salad

Ingredients:3 ounces cream cheese
2 teaspoons grated orange rind 1 cup green or red seedless grapes 1/2 cup toasted sliced almonds 4 cups coarsely torn salad greens 1 egg yolk 1 tablespoon white vinegar 1/4 teaspoon salt 1/8 teaspoon black pepper 1/8 teaspoon cayenne pepper 1/4 cup oil 2 1/2 tablespoons orange juice 1/4 teaspoon grated orange rind |
Directions:Press all sides of cream cheese into orange rind. Cut the cream cheese into 1/2-inch cubes. Slice the grapes in half.
Place salad green son a large platter or in a salad bowl. Place cream cheese cubes and grapes on lettuce. Sprinkle with almonds. In a blender, combine egg yolk, vinegar, salt, black pepper and cayenne pepper. Slowly drizzle the oil into the running blender; the dressing will thicken. Add orange juice and rind. Toss salad with dressing and serve chilled. |
