Ratatouille
Excellent as a vegetarian entree or side dish. This recipe tastes like summer to me! - Amy Katcher

Ingredients:1 small eggplant, diced
1 med. zucchini, diced 2 roma tomatoes, diced 1/2 yellow onion, diced 1 red pepper diced 1 tea. salt 1 Tbsp red wine vinegar 1/4 c. olive oil 1 tea. basil 1 tea. thyme 1/2 tea. oregano 3 cloves minced garlic |
Directions:Toss eggplant with salt and let stand 10 min.
Drain and pat dry. Heat oil and sauté garlic and onion. Add red pepper and cook three minutes. Add zucchini, tomatoes, eggplant, and herbs, cook four minutes more. Add vinegar, salt and pepper and stir well. Serve warm or cold. |
