Salmon Teriyaki

This is a great Canyon Ranch inspired dish that is easy to make. Great flavor. This recipe is meant to be shared, but not published without permission from CR. I would highly recommend investing in the cookbook!!! - ​Jeff Samuels

Prep Time: 20 - 25 Minutes
Cook Time:  3 - 5 Minutes
Servings:  4

Ingredients:

1 lb salmon fillets, cut into 4 equal portions
½ cup low-sodium wheat-free tamari soy sauce
2 Tbsp rice vinegar
3 tsp chopped fresh garlic
3 tsp fresh ginger, minced
1½ cups thawed apple juice concentrate
½ cup finely chopped green onions

Directions:

Combine all ingredients except onions and salmon by hand or ideally in a blender container and process. Stir in onions.

Place salmon in glass baking dish and pour the marinade over salmon. Marinate for 10 minutes to 1 hour. Turn salmon occasionally to evenly distribute marinade.

Preheat grill or broiler. Grill or broil 3 to 5 minutes on each side, or until fish flakes easily.

Recommend serving with Wild Rice (boiled with 3 parts water to 1 part chicken stock) and roasted vegetables (halved brussels sprouts and quartered/separated sweet onions roasted with some olive oil and sea salt to taste and texture at 350 degrees)
