Spicy Smoked Cauliflower

This is a great side dish with some kick, and it works well as a snack if you are looking for something a little on the smoky/salty side. It is low calorie, and fiber and nutrient dense. - Kathryn Fox

Prep Time: 10 Minutes
Cook Time:  60 Minutes
Servings:  4

Ingredients:

1 head of Cauliflower
2 cloves Garlic, unpeeled
2 Tbsp Olive Oil
1 tsp Smoked Paprika
1/2 tsp Cayenne Pepper
Salt & Pepper​

Directions:

Preheat oven to 400 F.
Take head of cauliflower and chop it into small pieces.
Take cloves of garlic and chop into small pieces.
In a medium sized roasting pan arrange the chopped garlic and cauliflower pieces. Pour the olive oil evenly over the cauliflower, and then sprinkle the paprika and cayenne over the mixture as well. You can add salt and pepper to your taste preference. Use your hands to thoroughly coat the cauliflower with the olive oil and spices.

Bake for 45 minutes to 1 hour. The longer you cook the crispier the florets.
