Spinach & Mushroom Quesadilla

This is one of my go to recipes because it is so quick and easy. You can really use any vegetables that you have on hand such as zucchini, squash, and broccoli. - ​Melissa St. Laurent

Prep Time: 5 Minutes
Cook Time:  10 Minutes
Servings:  2

Ingredients:

1 Tbs. Olive Oil
1 Medium Onion, sliced
1 clove of garlic, diced
6-8 mushrooms, sliced
3-4 cups of fresh spinach
1/4 teaspoon of Cumin
Salt & Pepper to taste
1/2 cup Feta cheese (optional)
2 - Tortillas

Directions:

In non-stick skillet, saute onion, garlic, and mushrooms over medium/high heat. Add spinach, salt, pepper and cumin, stirring until spinach begins to wilt. Remove from pan.

In same skillet, lay tortillas flat, dividing the cheese among them. Warm until cheese begins to melt. Fill each tortilla with half of the vegetable mixture. Fold the quesadillas in half and continue to cook for 3-5 minutes until golden brown, turning halfway.
