Stuffed Fall Squash
This hearty recipe is not only nutritious and delicious, it is also very versatile and affordable. I have made this many times and i must confess, my preference is for the acorn squash. Additionally, the filling can be almost any healthy foods you have in your kitchen. Some variation to consider: in the squash or mini pumpkin of your choosing, you might try a combination of wild rice, green apple, and bleu cheese for a tangy, earthy flavor; or, combine couscous, feta cheese, and pine nuts for a mediterranean flare (add olives, if you're into that sort of thing.) Omit starch for a low-carb variation. Leave out the cheese for a vegan alternative. Any combination of healthy veggies and grains that you like is best!

Ingredients:1 golden nugget squash (low in calories and rich in vitamin A and potassium)
1 package quinoa (a perfect protein) 3 or 4 mushrooms (a good source of riboflavin, niacin, and vitamin D) a handful of walnuts (packed with omega 3 fatty acids) goat cheese (a good source of protein and calcium) green onions (contains vitamins A, K, and C) |
Directions:Bake squash at 375 degrees for about 45 min.
While the squash is baking, prepare quinoa according to package directions. Chop mushrooms. You may either saute the mushrooms or add them fresh to the quinoa as it finishes cooking. When the squash is cooked enough to yield to gentle pressure, cut off the top and remove the seeds, leaving the meat. Add quinoa, mushrooms, walnuts, and about a tablespoon of the goat cheese. Using a fork, gently combine. The heat of the squash should be ample for a hot meal, however, if you wish, you may return the stuffed squash to the warm oven for about 10 minutes to meld all the ingredients together. Garnish with green onions. |
