Stuffed Peppers
Some people prefer to hollow out green peppers, place the mixture inside and bake the peppers placed straight up. I prefer my method, because less grease is captured within the pepper.
Since this recipe includes meat, cheese, rice and a vegetable (the peppers), it can be served as a stand-alone meal. However, it can also be complemented with side dishes if the chef so desires. - Dawn Kiefer

Ingredients:One lb. uncooked hamburger
One cup uncooked rice Six small-to-medium sized sweet green peppers One jar of pre-flavored spaghetti sauce Grated cheddar cheese One egg |
Directions:Cook the rice; let it cool.
Core green peppers and slice them lengthwise so that eventually each half will lay flat in a baking pan. Boil the green pepper halves until softened. Then place the halves into a baking pan and add a shallow layer of water into the pan. In a large bowl, thoroughly mix uncooked hamburger, cooked rice and one egg. Place the mixture into the green pepper halves. Bake at 350 degrees for about an hour, until the hamburger is thoroughly cooked. Heat the spaghetti sauce. Remove the baking pan and place grated cheddar cheese over all the stuffed peppers. Put back into the oven just until the cheese melts. Serve the stuffed peppers and allow each diner to pour their desired amount of spaghetti sauce over the stuffed peppers. |
