Taco Soup
Quick, easy, hearty recipe. I prefer to use tomatoes with some seasoning already added for extra flavor, You can also make the soup without any meat, separate into 2 containers and add meat to one, and keep the other one meatless for vegetarians. Great for church suppers or gatherings. Always a big hit and so easy. - Mauvaree Ferland

Ingredients:1 LB. ground turkey (or whatever meat you prefer)
1 - 16 oz can fat free refried beans 1 - 16 oz can pinto beans - do not drain 1 - 16 oz can whole kernel - do not drain (may use frozen) 1 - 16 oz can diced tomatoes (I use Hunt's roasted garlic tomatoes) 1 - 16 oz can Rotel mild tomatoes 1 - 8 oz can tomato sauce ( I use Hunt's seasoned with garlic, basil, and oregano) 1 - 1 oz packet Hidden Valley Ranch dressing mix (salad dressing mix - to not make dressing - put dry mix into soup) 1 1- oz packet Taco seasoning mix 1 small can chiles (Optional) |
Directions:Brown meat, drain, add remaining ingredients and simmer 20 to 30 minutes.
Can be made without meat. Great served with shredded cheese, sour cream and nachos. |
