Veggie Pizza
I change this up with whatever fresh veggies are on hand. Any kind of onion works, and I have added carrots and broccoli. You can also use the frozen bell pepper and onion mix. - Susan Thacker

Ingredients:Prepared pizza crust
1 T. olive oil 1 red bell pepper 1 red onion 1 small zucchini 1 cup mushroom slices 1/2 c fat-free shredded cheese 1/2 c colby jack shedded cheese cooking spray garlic Italian seasoning 2 T grated Parmesan cheese |
Directions:Brush olive oil on pizza crust. Add cheese.
In a pan, spray cooking spray and saute sliced vegetables and mushrooms about 3 minutes with garlic and Italian seasoning. Place on pizza and cook according to pizza crust directions. Top with Parmesan |
