Zesty Tilapia with Peppers and Tomatoes
This is a quick, everyday recipe that I enjoy as a post workout meal, or if I need to make something easy to carry to work the next day.
Some of my family members are from Savannah, which is why I wanted to make a seafood dish. I eat seafood very often and it can be a challenge to make seafood dishes that are exciting and simple with bold flavor, but my tilapia always hits "the spot."
It has a sweet flavor from the peppers and onions, a zesty hint from the lime and parsley and the tilapia is light and flaky. Plus, the tomatoes keep the fish very moist.
This is a great summertime dish, but you can make this anytime of the year for family, friends and love ones. They'll think you worked hard to make this, when you only spent 20 minutes actually cooking it.
I like to pair it with green vegetables and brown rice occasionally, or with a good salad on-the-side you can't go wrong.

Prep Time: 15 Minutes

Ingredients:3 pieces of tilapia
2 tablespoons of olive oil 1/2 cup of sliced red bell peppers 1/2 cup of sliced yellow onion 1/3 cup of multicolored grape or cherry tomatoes 1/4 teaspoon dried thyme 1/4 teaspoon seasoned salt 1/4 teaspoon granulated garlic 2 tablespoon lime juice 1/4 cup of chopped Italian flat-leaf parsley 1/4 teaspoon chili flakes (optional) salt pepper |
Directions:1. Preheat a medium skillet on medium-high heat.
2. Add olive oil and heat for 2-3 minutes. 3. Add red bell peppers and onions, and a pinch of salt and a pinch of pepper. 4. Cook uncovered until tender (about 5-7 minutes). 5. Add tomatoes, and stir. 6. Cover for 2 minutes. 7. In the meantime, season tilapia with thyme, seasoned salt, granulated garlic, pinch of salt and pinch of pepper. 8. Add fish to the skillet. 9. Cover and cook for 5 minutes on one side. 10. Uncovered, flip fish and cook (uncovered) for 3-4 minutes, or until tender and flaky. 11. Add lime juice and parsley and chili flakes (chili flakes are optional) 12. Serve and ENJOY |
